2020 Small Lot Pinot Noir

All hand-picked at average 22.8° Brix, 85% of the grapes were sourced September 22nd from the Mottiar Vineyard and 15% on September 15th from the Moira Vineyard.

The larger share (80%) of the grapes were crushed, but 20% was retained in whole clusters.  These were placed in the fermentation vessels in alternating layers.  40% of the fruit completed primary and malolactic fermentation in concrete tank, 30% in oak tank and 30% in stainless steel.  The wine was transferred to neutral (average age 6 years) French oak barrels to age for 8 months.  After blending, 499 cases were bottled in July 2021.

At the time of bottling, the wine was measured at 12.5% alcohol, 0 grams per litre residual sugar, 6.7 grams per litre titratable acidity and 3.65 pH.

Best served near 14 ° C with lamb burger, crispy mushrooms with creamy white beans and kale, soy glazed tofu and mushrooms, Peking Duck Pancakes or Tandoori Chicken.
