Grape clusters meeting the Winemaker’s criteria were picked from the Genova Vineyard and sorted by hand on October 11th and 12th as sugars achieved 20.6° Brix.

At the time of bottling, alcohol measured 11%, residual sugar: 0 grams per litre titratable acidity: 6.4 grams per litre and pH: 3.37
