2022 Mottiar Chardonnay

Hand-picked from the Mottiar Vineyard at 22° Brix average grape sugar.

From press, the juice filled mature (five-to-ten-year-old) 300-Litre French oak barrels. Equal portions fermented under wild and cultured yeast. Completing partial malo-lactic conversion, the wine aged in barrel for nine months in total before 140 cases were bottled in July 2023.

At the time of bottling, alcohol measured 12.5 %; residual sugar 1.5 grams per Litre; Titratable Acidity 5.7 grams per Litre; pH 3.25.

Near 10°C with Chicken Marsala, soft shell crab dipped in butter, mussels in creamy tarragon sauce, creamy potato soup, mild Vegetable Korma, pumpkin curry or fresh-cut fries with truffle aioli.
