Winemaker's Notes

The brooding, dark hue of this vintage foretells a maverick temperament, verified by intense black cherry, damson plum, mushroom and pot pourri aromas.  Streaming across the palate velvety and firm, its flavour is layered and lavish; suggesting dark red fruits and berries, backlit by lingering spice.

Picked by hand from the Mottiar Vineyard on September 23rd as grape sugars averaged 22° Brix.

The grapes were hand-sorted and divided for fermentation, 85% in concrete and 15% in a neutral oak cuve, using wild yeast. The larger share, 75 % of the wine, was transferred to mature (six-to-nine-year-old) French oak barrels and the remainder to first-use French oak to age for 10 months before 91 cases were bottled, unfiltered, in July 2023.

Dry: 1 g/L residual sugar

At the time of bottling, alcohol measured 12%; residual sugar: 1 grams per litre; 6.7 titratable acidity: pH:  3.63 grams per litre
