Winemaker's Notes

A swirl elicits thoughts of ripe raspberry and strawberry filling, fragrant pot pourri and earthy fall leaves and wood chips. The texture is flowing and lingering. Flavours suggest black cherry, pomegranate and cranberry, spiced by nutmeg and vanilla.

At the time of bottling, alcohol measured 13%; residual sugar: 1 grams per litre; 6.0 titratable acidity: pH: 3.6

Vinification Notes

80% of the grapes, picked and sorted by hand, were destemmed. The remainder was kept in whole clusters. All were layered into a stainless-steel tank for 15 days’ primary fermentation. The wine was transferred to neutral (average 7-year-old) French oak barrels to complete malolactic fermentation and age for nine months. When bottled unfiltered in August 2024, 73 cases were filled.
