Tasting Notes:

So much fruit rises from the glass! There’s cherry, raspberry jam, strawberry and rhubarb on the nose, garnished with apple blossom and white pepper. On the palate it’s juicy and succulent, tasting of red berry fruits, nutmeg, white pepper and herbal spice.

Dry: 1.0 g/L residual sugar

Vinification Notes

Gamay clusters were sourced from five vineyards: 38% from Malivoire Estate, 25% from Oppenleander, 22% from Wismer Foxcroft, 5% from Genova and 5% from Cherry Avenue.

After primary and complete malolactic fermentation, equal parts of the wine rested in neutral (three fills or more) barrels and stainless steel tank. After seven months, the finished product was blended and bottled in May 2025.

At the time of bottling, alcohol was measured at 12%, residual sugar at 1.0 gram per litre; titratable acidity at 6.3 grams per litre and pH at 3.5.

Serve near 14 ° C with charcuterie, grilled duck in a plum sauce or Korean Pork Bulgogi.
