2024 Rosé Moira

Hand-picked on a cool early morning from our original Moira Vineyard.

Whole grape clusters were gently pressed for minimal contact between juice and skins.  After chilling in a wide-profile stainless-steel tank (resembling a dairy tank) and contact with the gross lees or “bourbes”, the juice transferred twice to standard steel tanks for cooled fermentation.  The finished wine was bottled in February 2025.

At the time of bottling, alcohol measured 12.5%; residual sugar: 0 grams per litre; 7 titratable acidity:  3.2 grams per litre pH:

Serve near 11 ° C beside a mezza plate, tinned fish including sardines, anchovies or mackerel with fennel or
dill on sourdough toast, or with moules frites.
