Winemaker's Notes

Exotic baked pear, lychee and lime. Fragrant aura of kirsch, strawberry compote, raspberry and clove. It’s rich, round and unctuous, tasting of strawberry, maraschino cherry, blue plum jam, nutmeg and Swedish Berry candy.

Frozen Cabernet Franc berries were picked before dawn December 5th at 38.1° Brix.

Sweet: 225 g/L residual sugar

Vinification Notes

Destemmed grapes were held in tank for a 24-hour cold soak. After pressing, the juice returned to tank for primary fermentation without malolactic conversion.

194 cases of 200-mL bottles were filled in March 2026.

At the time of bottling alcohol measured 10.5%; Residual sugar was 225 grams per Litre; Titratable acidity, 9 grams per Litre; pH 3.7
