Picked by hand at the Malivoire Estate Vineyard on the -10° C evening of December 5th. Grape sugars averaged 38.7° Brix.
After stainless steel fermentation (no malolactic fermentation) the wine was settled and clarified in tank for three months and bottled in March 2026.
Alcohol: 11%; Residual Sugar: 225 grams per Litre; Titratable Acidity: 7.3 grams per litre; pH: 3.5
Quantity bottled was 300 cases.
