This is a non-vintage wine. It's made to be as similar from year to year as possible, allowing for different vintages to be included in the disgorgement. Details and tasting notes here are from the most recent bottling as well as the credentials that this wine continues to earn year after year.
Winemaker's Notes
Bakeshop-style aromas pronounce apple pie, almond extract, date square, melba toast, a dash of olive brine and a sprig of baby’s breath. Festive effervescence and nimble acidity underlie flavours of lemon zest, green apple, sourdough, and lingering mineral, bruléed sugar and grapefruit flourishes.
Composed 70% of Chardonnay, 23% Pinot Noir and 7% Pinot Gris;
All varieties were grown and hand-harvested at our three Estate sites on the Beamsville Bench, the majority from early in the harvest of 2020.
Alcohol 12% Dosage 6 g/L
Disgorgement, in May 2024, followed 3 years on the lees.
