Winemaker's Notes

Aromas and flavours tell of sliced green apple, tropical tangerine and grapefruit with a toast-and-butter underlay. A taste is frothy, zesty and mouth-filling, with lingering
flavours of lemon, star fruit and brioche.

Composed 70% of Chardonnay, 23% Pinot Noir and 7% Pinot Gris;

All varieties were grown and hand-harvested at our three Estate sites on the Beamsville Bench, the majority from early in the harvest of 2020.

Alcohol 12% Dosage 6 g/L

Disgorgement, in May 2024, followed 3 years on the lees.

Vinification Notes

Vinified in the Traditional Method, the grapes were whole cluster pressed and fermented in mature (eight years or older) French oak
barrels, with a small addition of a second base wine from earlier vintages.

Once bottled, the wine was transferred to our original cellar beneath the Moira Vineyard for secondary fermentation. Disgorgement, in
May 2024, followed three years on the lees.

Pairing + Serving

Chill to near 8° C, pairs well with seafood, cheese and light desserts.

Enjoy with Sunday fried chicken, roasted squash with crème fraiche and pumpkin seeds, or buttered popcorn.
