Winemaker's Notes

Bakeshop-style aromas pronounce apple pie, almond extract, date square, melba toast, a dash of olive brine and a sprig of baby’s breath. Festive effervescence and nimble acidity underlie flavours of lemon zest, green apple, sourdough, and lingering mineral, bruléed sugar and grapefruit flourishes.

Composed 70% of Chardonnay, 23% Pinot Noir and 7% Pinot Gris;

All varieties were grown and hand-harvested at our three Estate sites on the Beamsville Bench, the majority from early in the harvest of 2020.

Alcohol 12% Dosage 6 g/L

Disgorgement, in May 2024, followed 3 years on the lees.

Vinification Notes

Vinified in the Traditional Method, the grapes were whole cluster pressed and fermented in mature (eight years or older) French oak barrels, with a small addition of a second base wine from earlier vintages.

Once bottled, the wine was transferred to our original cellar beneath the Moira Vineyard for secondary fermentation. Disgorgement, in May 2024, followed three years on the lees.

Chill to near 8° C, pairs well with seafood, cheese and light desserts.

Enjoy with Sunday fried chicken, roasted squash with crème fraiche and pumpkin seeds, or buttered popcorn.

This is notably intense, generous and complex sparkler based on chardonnay and pinot noir from estate vineyards, aged 36 months in bottle. One of the most outgoing in Niagara. Expect a ripe nose of apple, honey, crispy shallot, lemon. It is light to mid-weight, open knit, intensely flavoured with a loose mousse, a touch of froth. It is dry with intense lemon and nutty flavours hitting excellent length. Tasted November 2025
