Winemaker's Notes

Voluptuously aromatic of white peach, lemon sorbet, pineapple and kiwi with floral accents.

A sprightly sparkling texture makes Che Bello playfully fruity and dry, with flavours of green apple, lime and pear and a zesty, citrusy finish.

Following primary fermentation, the wine was transferred to a pressurized steel tank for secondary fermentation in the “charmat” method.  There was no malolactic fermentation.

At bottling, alcohol was 11.5% and RS at 16 g /L; pH: 2.7 ; Titratable Acidity:
11.2 g / L

Dry (prosecco-style) : 16 g/L residual sugar

Food Companions:

Everything goes with sparkling and especially this 'prosecco-style' sparkling wine.

Try some of these classic suggestions: triple cream, brie-style cheese or sweet bread and mascarpone cheese; butter cream sauce or even buttered popcorn;  Shrimp and shellfish, smoked salmon, caviar, fried calamari, and oysters; Salami, veggies, stuffed mushrooms, egg dishes, foie gras.

Lifted aromas of citrus and pineapple adorned by pit fruit—apricot and nectarine—abound on the nose and are carried along by the energetic ‘mousse’—aka bubbles on the top of the wine when poured in the glass. A real treat awaits on the palate with a delightful yin and yang delivered by the yin of sweet ripe fruit—cantaloupe and peach—and the delightful yang and tang delivered by lip-smacking lemon curd and crisp Granny Smith apple.
