Winemaker's Notes:
Cabernet Sauvignon 50%, Merlot 50%
Plum, cinnamon and cigar box nestle into darkly fruity, spicy and earthy aromas.
A mouthful is deep and luscious. Flavours combine black cherry, cocoa and coffee with a lingering nutty, oak-vanilla undercurrent.
Picked October 24th at the Stouck Family Vineyard as grape sugars averaged 23.1° Brix.
Components were crushed and divided for primary fermentation, some going to a 1,000-Litre oak cask and the rest to 228-Litre barriques. American oak made up 60% of the barrels, the rest being French oak, and 30% of the total were in first use.
The wine was blended after 17 months and bottled in April 2020.
When the finished wine was bottled, alcohol measured 12.5%, residual sugar 0 grams per litre, titratable acidity 6.1 grams per litre and pH 3.75.
Dry: 0 g/L residual sugar
