2019 Moira Chardonnay SKIN

Winemaker Notes:

Deceivingly fresh nose along with fennel, ginger spice and vanilla pod. Rich and toasty with banana, and notes of granny smith apple, quince and yuzu on the palate.  Surprisingly creamy, smooth textural finish.

Picked from 24-year-old vines at the Moira Vineyard on
October 7th as grape sugars averaged 21.6° Brix.

Hand-harvested chardonnay grapes were sorted, destemmed and layered into a ceramic “orb”. The wine and grape skins were given extended contact to complete primary and malolactic fermentation over a five-month period.

After this, the wine was transferred, with minimal oxygen exposure to maintain fresh aromatics, to a stainless-steel barrel to mature for another four months.

The wine filled 30 cases in August 2020.

At the time of bottling, Alcohol measured: 12%,  Residual sugar: 0 grams per Litre; titratable acidity: 6.6 grams per Litre; pH: 3.5

Dry: 0 g/L residual sugar
