2021 Demo Series Amaranth Sparkling - Pre-Release!
PLEASE NOTE: Due to limited quantities, only 1 bottle per person.
Composition: 55% Pinot Noir, 30% Gamay, 15% Pinot Gris
Like its name, this sparkler greets with a deep, translucent amaranth colour, offering a breath of black cherry syrup, blueberry, raisin, violet and anise. The texture evolves, pouring frothy and spritzy before spreading smoothly over the palate.
Pinot noir from the Mottiar Vineyard, gamay from the Genova Vineyard and pinot gris from the Malivoire Estate were picked by hand between September 9th and October 21st of 2021 as grape sugars reached average 18.8° Brix.
Made in the Traditional Method, resting 12 months on the lees. Dosage of 6 grams per Litre was added at disgorgement in May 2023. When bottled, 69 cases were filled.
Dry: 6 g/L residual sugar
At the time of bottling, alcohol measured 12%; residual sugar: 6 grams per litre; 7.1 titratable acidity: 3.29 grams per litre pH
Serving suggestions: Chill to around 8° C to offer beside roast duck with blueberry sauce, Teriyaki salmon or for Apéro with cheeses or other light foods.
