Tasting Notes:

The nose focuses cranberry, black cherry, blackcurrant, mulberry and pomegranate before a fragrantly earthy backdrop. Mouthfillingly bubbly, its flavour delivers cherry syrup, blackberry and blueberry, leaving a savoury, slightly flinty finish.

Vinification Notes

Pinot noir from the Mottiar Vineyard, was picked September 21st at 18.4° brix and gamay from the Genova Vineyard picked October 6th at 18° brix.

This 2023 vintage Traditional Method sparkling wine, after co-fermenting for a few days, was pressed to complete fermentation in stainless steel. Six months in older 225-L French oak barrels preceded tirage, and the wine rested a full year on the lees in bottle before disgorgement with 8 g/L dosage, in June 2025.

Production was 300 six-bottle cases.
