2023 Cabernet Franc

52% of the fruit was picked at the Cascade Vineyard adjacent to
Ball’s Falls November 16th, as grape sugars averaged 23.1 ° Brix. The remainder was collected on the neighbouring Wismer Wingfield property at 22.2° Brix, November 20th.

Freshly picked grapes were destemmed for primary and full malolactic fermentation. Most of the wine settled and matured for 16
months in neutral barrels, but 10% spent the first six months in new
French oak. The wine was blended, and 351 cases were bottled in
March 2025. 

At the time of bottling, alcohol measured 12.5%; Residual Sugar 2 g; Titratable Acidity 6.6 grams per litre; pH 3.42.

Serve near 14° C with vegetarian chili, lentil soup, traditional burgers or grilled vegetable sandwiches.
