Winemaker's Notes
Nose and palate abound with candied red cherry and raspberry, holding plum and rhubarb for the nose and cranberry and thyme for the palate.
The texture is bright, fruity and easy-going, as the wine finishes long and spicy.
Composition: 50% Pinot Noir, 50% Gamay
Picked by hand; pinot noir October 5th from the Moira Vineyard at 23.4° Brix, and gamay October 10th at 20.4° Brix from the Malivoire Estate.
Dry: 0 g/L residual sugar
At the time of bottling, alcohol measured 12.5%; residual sugar: 0 grams per litre; 6.1 titratable acidity: pH: 3.52 grams per litre
