Winemaker's Notes

Radiant raspberry and pomegranate delight the nose, dressed by cremini mushroom, vanilla and floral scents.

It’s silky and luscious, as flavours of cherry, strawberry, chocolate and black tea cross the palate, leaving raspberry and spice on the finish.

Dry: 1 g/L residual sugar

At the time of bottling, alcohol measured 12 %; residual sugar: 1 gram per Litre; titratable acidity: 6.3 grams per Liter pH: 3.8 grams per Litre

Vinification Notes

Picked by hand from the Mottiar Vineyard in October, as grape sugars averaged 21° Brix.

The grapes were hand-sorted and divided for fermentation, 40% in concrete and 60% in neutral oak, using wild yeast. Most berries were destemmed, but 5% were retained in whole clusters. After 10 months to age in mature oak 107 cases were bottled, unfiltered,
in August 2024.

Near 14° C alongside mushroom risotto, grilled salmon or beets with whipped goat cheese.
