Vinification Notes

Grape clusters achieving 20.5° Brix were picked and sorted on
the 6th of October.

After destemming. the grapes underwent primary and 100%
malolactic fermention in an oak tank. The wine was pressed from
the skins to age for ten months in older French oak barrels, after
which, 150 cases were bottled in May 2025.

At the time of bottling, alcohol measured 12%, residual sugar: 0.9 grams per litre titratable acidity: 6.5 grams per litre and pH: 3.62
