After the grapes were destemmed, the juice and skins were held for a 48-hour cold-soak. The must was pressed for fermentation and settling in stainless steel, producing 299 cases for bottling in February 2025.

At the time of bottling alcohol measured 13%, residual sugar 0.5 g, titratable acidity  4.9 grams per litre and pH 3.6 .

Chilled to 9 to 12°, beside foods with a touch of sweetness and heat. Sichuanese dishes and traditional German fare like pork chops or sausages with sauerkraut are ideal partners.
