2025 GAMAY

Gamay clusters were picked at average 21.9° Brix from six
Niagara vineyards: Malivoire Estate, Oppenlaender, Wismer
Foxcroft, Genova, Ianello and Kirby.

After primary and complete malolactic fermentation, equal parts
of the wine rested in either neutral (three fills or more) barrels or
stainless-steel tank. After seven months, the finished product
was blended and bottled in May 2026.

At the time of bottling, alcohol was measured at 12%, residual sugar at  1.0 gram per litre; titratable acidity at 7.6 grams per litre and pH at 3.3.

Serve near 14 ° C with charcuterie, grilled duck in a plum sauce or Korean Pork Bulgogi.

Light and crisp, with abundant nuances of raspberry, strawberry, red cherry, and cranberry, and supple, discreet tannins. Very well made. Serve chilled with steak tartare or duck breast. Drink now. (Tasted blind at NWAC 2026.)

This Vintages Essentials was poured as the Mystery Wine at the Canadian Culinary Championship in Ottawa, and it drank well for two hours as guests tried 10 dishes specifically designed to match it. It has generous, pretty nose of strawberry/cherry, perfumed lilac florals and light spice. It is light to medium bodied, crisp, juicy, quenching and warming with lively acidity. Tannin is minor. Exactly what many will expect from Niagara gamay. Chill a bit.
