Tasting Notes

Composition: 52% gamay, 41% cabernet franc and 7% pinot noir.

The aroma is a salvo of strawberry, fruit punch, bing cherry and cantaloupe with spiced and floral inflections. It’s clean and silky in the mouth, tasting of strawberry-rhubarb, McIntosh apple and lemon citrus, leaving a gently fresh, citrusy-herbal finish.

Dry: 3.0 g/L residual sugar

Vinification Notes

Pressed from grapes grown specifically for this wine, picked as sugars averaged 21° Brix.
Grapes were destemmed and vinified separately by variety, including a half-day cold soak. Cold-fermentation and stabilization were completed in stainless steel before blending and bottling in February 2026.

At the time of bottling, alcohol measured at 12 %, residual sugar 3.0 grams per litre, titratable acidity 7.1 grams per litre and pH 3.3.

Chill to near 10°C and serve with Pissaladière flatbread, turkey burgers with tzatziki and cucumber, or with French fries and curried ketchup or mayonnaise. Enjoy now through 2028.
