Winemaker's Notes

Composition: 100% Melon de Bourgogne

It’s dazzlingly scented of meyer lemon, peach, honeydew melon and candy floss.
The palate finds it generous, vivid and fresh, flavoured of lime, gooseberry and green apple, leaving a citrus zest-mineral finish.

Dry: 0 residual sugar.

Enjoy now through 2028.

Vinification Notes

Pressed from whole grape clusters, the fresh juice underwent primary fermentation, settling and ageing in stainless steel tanks with extended lees contact. After two months, bottling filled 385 cases in December 2025.

At the time of bottling ; Alcohol measured: 12%; Residual Sugar: 0 grams per Litre; Titratable Acidity: 8.9 grams per litre; pH: 3.05

Pairing + Serving

Chill to near 7°C and serve with sushi, oysters of course, try Malpeques b and Colville Bay oysters, blackened white fish with mango salsa, fresh ceviche with tortilla chips.
