Vinification Notes

Picked October 28th at the Stouck Family Vineyard as grape sugars averaged 19.2 ° Brix.

Destemmed grapes were held for a day-long cold soak before pressing, after which, the juice fermented in a chilled stainless-steel tank. After four months to settle, it went to bottle in February 2025.

Pairing + Serving

Chill to near 11° C and serve beside grilled peach salad with fresh goat cheese and a honeyed vinaigrette or something with fennel. For another tasty choice, try pan-seared shrimp with fennel, arugula and grapefruit salad.
