Winemaker's Notes

Intricately woven aromas blend peach, lime, tangerine, meringue, honeysuckle and elderflower blossom. The texture is soft and silky.

Flavours conjure pineapple, apricot, bosc pear and white peach, leaving a honeyed, citrus, herbal finish.

At the time of bottling, Alcohol measured 12%; Residual Sugar: 1.0 gram per Litre; Titratable Acidity: 7.2 grams per litre; pH: 3.54

Dry: 1 g/L residual sugar

Vinification Notes

Picked October 28th at the Stouck Family Vineyard as grape sugars averaged 19.2 ° Brix.

Destemmed grapes were held for a day-long cold soak before pressing, after which, the juice fermented in a chilled stainless-steel tank. After four months to settle, 283 cases went to bottle in February 2026.

Pairing + Serving

Chill to near 11° C and serve beside grilled peach salad with fresh goat cheese and a honeyed vinaigrette or something with fennel. For another tasty choice, try pan-seared shrimp with fennel, arugula and grapefruit salad.
