Winemakers Notes

Composition: 100% Pinot Noir

This gregarious rosé hooks your attention with aromas of white strawberry, raspberry cream, Bergamot orange and cherry blossom. Fresh and juicy on the palate, it tastes of cherry, grapefruit, rhubarb and cantaloupe.

DRY: 0 g sugar

Vinification Notes

Estate-grown grapes were hand-picked at cool daybreak
temperatures, September 22nd, as grape sugars averaged
19.6° Brix.

Estate-grown Pinot Noir clusters were hand-picked September
22nd at 19.6° and pressed immediately for optimum freshness.
The juice chilled in a horizontal “dairy tank” prior to cool fermentation in stainless steel, after which 643 cases were
bottled in February 2026.

At the time of bottling, alcohol measured 12.5%; residual sugar: 0 grams per litre; 7.6 titratable acidity: grams per litre pH: 3.1

Pairing + Serving

Chill to near 11°C and enjoy with chicken liver mousse or pâté and hummus, drizzled with olive oil and pistachio, served with crunchy pita bread.
