Winemaker's Notes
100% Melon de Bourgorne grapes from the Malivoire Estate Vineyard.
This more assertive interpretation of the variety offers Bosc pear, cantaloupe, mandarin orange, orange blossom and honeysuckle to the nose. Delivered in a fresh, saline mouthfeel, flavours present citrusy lime and lemon tart, spicy ginger and mineral undertones.
Hand-picked October 6th from the Malivoire Estate Vineyard at grape sugar average 20° Brix.
Pressed in whole grape clusters. Primary fermentation, settling and 20 months’ maturing on the lees were completed in one stainless-steel barrel.
Only 28 cases were bottled in July 2023.
Enjoy now through 2027.
Serving suggestions: Chill to 7° C and pair with ceviche, white fish, oysters or other shellfish.
Dry: 4 g residual sugar.
At the time of bottling, alcohol measure 12%, residual sugar at 4 g/L, Titratable Acidity at 8.1 grams/L, and pH and 3.15.
